Chocolate Peanut Butter Pizza

Once again, 2 of my favorite things together in one dessert: chocolate and peanut butter. This is great for any party, and there won't be any left. I got this recipe at a baby shower, and I won't say how many slices I had : )

Ingredients:

1/2 cup shortening
1/2 cup peanut butter
1/2 cup packed brown sugar
1/2 cu[ granulated sugar
2 eggs, lightly beaten
1/2 tsp vanilla
1 & 1/2 cups all purpose flour
2 cups mini marshmallows
1 cup ( 6 ounces) semisweet chocolate chips

Directions:

1. Preheat oven to 375 degrees. Grease a 12 inch pizza pan.
2. In mixing bowl, combine shortening, peanut butter, and sugars. Then beat in eggs and vanilla.
3. Stir in flour and mix well...pat into the pizza pan. Bake 12 minutes. Sprinkle with marshmallows and chocolate ships. Return  to oven for an additional 4-6 minutes, or until lghtly browned.

**16-20 slices

S'mores Bars

Anything that reminds me of s'mores I will definetly try. And these bar didn't disappoint.

Ingredients:

9 whole graham crackers
1 (19 oz) pkg chocolate brownie mix, prepared, but not baked
2 cups mini marshmallows
1 cup semi sweet chocolate chips
1/2 cup chopped roasted peanuts

Directions:

1. Preheat oven to 350 degrees and spray a 13 x9 pan
2. Arrange graham crackers in a single layer in bottom of pan, breaking crackers as necessary to cover.
3. Spread prepared brownie batter evenly over crackers, and bake for 25 minutes.
4. Remove pan from oven, and sprinkle with marshamallows, chocolate chips and peanuts. Bake for 5 minutes or until marshmallows begin to melt. Cool completely on wire rack before cutting.

***12-15 servings

Taffy Apple Salad

This reminded me of a waldorf salad, with a twist. It's really great tasting, and very easy.

Ingredients:

1 can (16 oz) pineapple chunks, diced, drained, & juice reserved
2 cups mini marshmallows
1/2 cup granulated sugar
1 tbl all purpose flour
1 tsp white vinegar
1 egg, well beaten
1 container (8 ox) frozen whipped topping-thawed
4 medium sized apples, peeled, diced
1 & 1/2 cup dry roasted peanuts, chopped fine

Directions:

1. Refrigerate marshamallows & pineapple, covered, overnight.
2. In small sauacepan, stir together reserved pineapple juice, sugar, flour, vinegar, and egg. Cover, and over medium low heat, stirring for about 5 minutes or until temperature reaches 160 degrees. Cool, then refridgerate covered in bowl overnight.
3. In large bowl, combine the 2 chilled mixtures with the whipped topping, apples, and 1 & 1/4 cups of the peanuts.
4. Sprinkle remaining 1/4 cup of the peanuts on top, and chill until ready to serve.

***10 servings

Apple Marshmallow Salad

This very similar to a waldorf salad. This is great for a crowd.


Ingredients:

1 can (20 oz) crushed pineapple
1/2 cup sugar
1 tbl flour
1-2 tbl vinegar
1 egg beaten
1 carton (12 oz) frozen whipped topping, thawed
2 medium red apples, diced
2 medium green apples, diced
4 cups mini marshmallows
1 cup honey roasted peanuts

Directions:

1. Drain pineapple, reserving juice, and set pineapple aside.
2. In saucepan, combine the sugar, flour, vinegar, and the reserved juice until smooth.
Bring to a boil, cook and stir for 2 minutes or until thickened. Remove from heat and stir
a small amount of hot mixture into egg, then return all to pan, stirring constantly. Bring
to a gentle boil, cook and stir for 2 minutes. Remove from heat and cool.
3. Fold in whipped topping. Fold in apples, marshmallows, and pineapple.
4. Cover and refrigerate for 1 hour. Just before serving, fold in peanuts.

S'more Brownies

This has everything you love about the traditional campout treat, but so much more.


Ingredients:

Crust:
6 tbl (1 stick) unsalted butter-melted
1 & 1/2 cups crushed graham cracker crumbs
2 tbl sugar
pinch of salt

Brownie:
8 tbl (1 stick) unsalted butter-melted
4 ounces unsweetened chocolate, chopped
1 cup packed light brown sugar
3/4 cup white sugar
1 & 1/2 tsp vanilla extract
1/2 tsp fine salt
4 large cold eggs
1 cup all purpose flour

Topping:
4 cups large marshmallows


Directions:

1. Position a rack in lower third of oven and preheat oven to 325 degrees. Line a 8x8 baking pan with foil so it hangs over the edges.
2. For the crust...lightly butter the foil with some of the melted butter. Stir the rest of the butter together with the crumbs, sugar, and salt in medium bowl. Press the crumb mixture evenly over bottom of pan. Bake until golden brown, about 20 minutes.
3. Meanwhile, make the brownie. Put the butter and chocolate in medium mircowave safe bowl and melt on medium power for 2 minutes. Stir and microwave again until completely melted, about 2 more minutes. Stir the light brown sugar and regular sugar, vanilla, salt into the melted
chocolate. Add the eggs and beat well to make a thick and glossy batter. Add the flour and stir until just blended.
4. Pour batter into prepared pan and bake until the top is crispy and a toothpick inserted into the the middle comes out mostly clean, with a few crumbs, about 40- 45 minutes.
5. Remove from the oven and carfully position a rack about 6 inches from the broiler and preheat on low. Layer marshmallows across the top and toast under the broiler until golden about 2 minutes (watch very carefully). Cool on a rack, gently removing the brownies from the pan using the foil. Carefully separate any marshmallow from the foil and fold away. Cut into 12-2 inch squares.

Candied Yam Souffle

All I can say is YUMMY, and give me more!!!

Ingredients:

1 stick of butter
1 cup light brown sugar
1/2 cup chopped pecans
2 large (40 oz each) cans yams-drained
1 tsp cinnamon
1 tsp nutmeg
1 (12 oz) jar marshmallow fluff

Directions:

1. Preheat oven to 325 degrees
2. Melt butter in saucepan over medium heat, add brown sugar and pecans...simmer 3 minutes.
3. Meanwhile place drained yams in large bowl and finely mash with potato masher, leaving some chunky pieces.
4. Pour sugar/pecan mixture over yams...stir until combined thoroughly .
5. Add cinnamon and nutmeg.
6. Tansfer to metal pie pan and top with marshmallow topping.
7. Bake for 15 minutes at 325 degrees, remove and raise temperature to 400 degrees.
8. Bake for an additional 10 minutes to brown top, watching closely to keep top from over browning.

**8 servings

5 Cup Salad

This very simple salad has been around a very long time. I remember my Mother making it when I was a kid....and it's still a favorite of mine (and alot of people).

Ingredients:

1cup sour cream
1 cup coconut
1 cup mini-marshmallows
1 cup crushed pineapple-drained
1 cup mandarin oranges-drained

Directions:

Easy...mix all ingredients together and chill thoroughly. When ready to serve, place generous scoop on a bed of lettuce leaves....serves 6

Marshmallow Snack Clusters

Take all the things you like to snack on, and put them all together in this great candy morsel.

Ingredients:

3 tbls unsalted butter
4 & 1/4 mini marshmallows
1 tsp vanilla
3/4 cup chopped peanuts (or any other nut you like)
1 & 1/2 cups broken up pretzel sticks
1 cup semisweet chocolate chips

Directions:

1. Melt butter in saucepan...then stir in 3 & 1/4 cup of the marshmallows to melt.
2. Once melted, remove from heat and add the vanilla. Let cool slightly.
3. Stir in rest of ingredients, until just combined...don't overmix.
4. Spray hands with non stick spray, then shape the clusters with your fingers.

**Some people like to add 1/2 cup raisins to the mix

** Makes about 3 dozen

Chocolate Peanut Butter Pizza

This is great for a crowd (16-20 servings) and has all my favorite things...chocolate, peanut butter, marshmallows. It's alright if you don't want to share...enjoy.

Ingredients:

1/2 cup shortening
1/2 cup peanut butter
1/2 cup brown sugar, packed
1/2 cup granulated sugar
2 eggs, lightly beaten
1/2 tsp vanilla
1 & 1/2 cup all purpose flour
2 cups mini marshmallows
1 cup (16 ounces) semi sweet chocolate chips

Directions:

1. Preheat oven to 375 degrees and grease a 12 inch pizza pan.
2. In mixing bowl, cream shortening, peanut butter, and both sugars.
3. Beat in eggs and vanilla.
4. Stir in flour and mix well.
5. Pat into prepared pizza pan and bake for 12 minutes.
6. Remove from oven and sprinkle with marshmallows and chocolate chips...return to oven for 4 to 6 minutes until lightly browned.

S'More Brownies

O.K., here's another twist on the Girl Scout favorite. I have a few of these variations. Why? Because there is nothing better than chocolate, marshmallow, and graham crackers...in any shape or form. So enjoy!

Ingredients:

4 whole (5 x 2 & 1/2 inch) graham crackers
2 milk chocolate bars (1/55 ounce each)
1 pkg (19.8 to 21 ounce) brownie mix (plus the ingredients to make the brownies)
1 cup mini marshamallows

Directions:

1. Preheat oven to 350 degrees. Spray a square baking dish with non stick cooking spray.
2. Prepare brownie mix according to package directions and pour into the baking dish.
3. Spread brownie mix to the edges and bake 25 minutes.
4. Coarsely chop graham crackers and candy bars.
5. Remove brownies from oven and and immediately top with marshmallows, chocolate pieces, and graham crackers...pressing lightly.
6. Return to oven and bake 5 to 7 minutes, or until chocolate begins to melt.

S'more Bars

New take on an old Girl Scout favorite. Very tasty!

Ingredients:

Crust-
14 (5 x 2 & 1/4) graham crackers (approximately 2 & 1/2 cups) crushed
1/2 cup butter or margarine-melted
1/2 cup sugar

Filling/Topping-
3 pkg (8 ounce each) cream cheese, softened
1/4 cup sugar
2 eggs
1 tsp vanilla
3 cup mini marshmallows
1 cup (6 ounces) milk chocolate morsels
4 (5 x 2 & 1/4) graham crackers-coarsely broken

Directions:

1. Preheat oven to 350 degrees. Lightly spray bottom of a bar pan.
2. For crust: finely chop graham crackers and place in a medium bowl.
3. Add butter and sugar, mix well. Then press crumb mixture onto bottom of the bar pan.
4. Bake 10 minutes.
5. For filling: combine cream cheese, sugar, eggs, and vanilla and mix until smooth.
6. Carefully spread cream cheese mxture over the crust.
7. Bake 12 to 18 minutes or until center is almost set.
8. Remove to cool and immediately top with mini marshmallows, chocolate morsels, and the extra graham crackers.
9. Cool to room temperature.
10. For easier cutting, refrigerate for 15 minutes, then cut into approximately 32 bars. Store covered in refrigerator.

Rocky Road Cookies

These cookies are soooo satisfying. They have all my favorite things: chocolate, butter, marshmallows, and pecans. I can't remember where I got this recipe, but they fast became a favorite. You'll love them too!

Ingredients:

1 cup semisweet chocolate chips
1/2 butter, softened
1 cup granulated sugar
2 large eggs
1 tsp vanilla
1 & 1/2 cups all purpose flour
1 tsp baking powder
1/2 tsp salt
1 cup chopped pecans
1/2 cup mik chocolate morsels
1 cup, plus 2 tbls mini marshmallows

Directions:

1. Preheat oven to 350 degrees and line baking sheets with parchment paper.
2. Microwave semisweet chocolate chips in bowl on high for 1 minute or until smooth, stirring every 30 seconds.
3. Beat butter and sugar at medium speed until creamy, then add eggs, 1 at a time, beat after each egg.
4. Beat in vanilla and melted chocolate.
5. Combine flour, baking powder, and salt & slowly add to chocolate mixture, beat unitl well blended.
6. Stir in chopped pecans and the 1/2 cup milk chocolate morsels.
7. Drop by heaping tablespoonfuls onto prepared sheets.
8. Press 3 marshmallows into each cookie.
9. Bake for 10-12 minutes, or until set. Let cookies cool for 1 minute, then remove to wire racks. Makes about 36 cookies
