These are a nice, refreshing appetizer everyone will love.
Ingredients:
1 tbl mayonaise
1 tbl each chopped fresh chives and fresh parsley
1/2 tsp dry mustard
1/2 tsp seafood seasoning
1 lime, zested and juiced
1 pkg ( 8 oz) lump crabmeat, drained
1 seedless cucumber , sliced
Directions:
1. In medium bowl, mix together first 5 ingredients, 2 tbl of lime juice and 1/2 tsp of the zest. Season with black pepper, if desired. Add mixture to crabmeat.
2. Spoon 1 heaping tsp of crab mixture onto each cucumber sliice (may have use paper towel to dab excess moisture).
3. Press toothpck through each appetzer and chill til ready to serve.

Crab Cups
This is a no brainer appetizer for a get together. Everyone will go crazy for them.
Ingredients:
4 ounces cream cheese, softened
1/4 cp shredded cheddar cheese
2 tbl mayo
1 tsp lemon juice
1/2 tsp seafood seasoning
1/2 tsp garlic powder
1 scallion, thin sliced
1/4 pound crabmeat, flaked
1 (21 ounce) box mini phyllo shells (15 per box)
Directions:
1. Preheat oven to 350 degrees.
2. In medium bowl, beat cream cheese, cheddar, mayo, lemon juice, seafood seasoning, and garlic just until combined.
3. Gently beat in scallion and crabmeat, just until evenly mixed.
4. Spoon 1 tbl crab mixture into each phyllo cup and place on baking sheet.
5. Bake 15 minutes or until heated through and shells are golden.

Easy Crab Rangoons
These are very simple, but OHHH so good! Just don't forget to add the crab meat (like I did for a Super Bowl party I was going to. Halfway there, I realized, having been rushed to get out the door, I forgot the crab. Everyone still like them! But my husband and especially my daughter won't let me forget "you forgot the crab". Anyway...enjoy.
Ingredients:
6 ounces lite cream cheese, soft
1 can crabmeat, drain and crumbled
2 green oinions, chopped
1 clove garlic, minced
2 tbl worcestershire sauce
1/2 tsp soy sauce
1 package of wontons
non stick vegetable spray
Directions:
1. In medium bowl, combine all except the wontons...mix well.
2. To prevent wontons from drying out, only prepare 1 or 2 at a time. Place 1 tsp filling in center
of each wonton. Moisten edges with water, fold in half to form a triangle, pressing edges to seal.
3. Pull bottom corners down and overlap slightly, moisten on corner and press to seal.
4. Lightly spray baking sheets and arrange rangoons on sheet and lightly spray to coat. Bake at 425 degrees for 12 to 15 minutes, or until golden brown.
5. Serve with sweet and sour sauce or mustard sauce.

This casserole is soooo easy and very impressive, It's great for a buffet, brunch or dinner.

1 cup sour cream
1/3 cup grated parmesan cheese
1 tbl lemon juice
1 tbl grated onion
1/2 tsp salt
1 dash tobasco
2 pounds crabmeat, picked through
3/4 cup soft bread crumbs
1 tbl melted butter
paprika
Directions:
1. Preheat oven to 350 degrees. Well grease 6 individual shells or custard cups.
2. Combine sour cream, parmesan, lemon juice, onion, salt and tobasco...mix thoroghly.
3. Pour over craqb meat and mix lightly. Place in prepared cups.

5 tbl butter, melted and divided
1 tsp salt
dash pepper
1/2 tsp worcestershire sauce
1/2 tsp mustard
1 cp evaporated milk
1 tbl finely chopped green pepper
1/2 cup soft bedcrumbs
Ingredients:
1. Preheat oven to 350 degrees. Grease bottom and sides of 2 quart baking dish.
2. Combine crabmeat, eggs, parsley, 3 tbl of the butter, salt and pepper, worcestershire,
mustard, milk, and green pepper. Gently pat into casserole dish.
3. Combine breadcrumbs with the rest of butter, sprinkle on top and bake for 20 minutes or
until set.

This casserole would be great for an evening meal, as well as a great addition to any entertaing buffet. It has all the taste of a crab cake, but none of the mess of making and frying patties.
Ingredients:
1 pound of crab cake, picked through
3 eggs, well beaten
1 tbl chopped fresh parsley
3 tbl butter, melted
1 tsp salt
dash of black pepper (or cayenne pepper if you like it spicy)
1/2 tsp worcestershire sauce
1 cup evaporated milk
1/2 tsp mustard
1 tbl finely chop green pepper(or celery)
2 tbl finely chop onion (or scallions)
juice of 1/2 lemon
1 cup breadcrumbs
4 tbl butter, melted
Directions:
1. Preheat oven to 350 degrees and grease bottom and sides of 2 qt baking dish
2. Combine crabmeat, eggs, parsley, 3 tbl melted butter, salt, pepper, worcestershire, mustard, green pepper, onion, and lemon.
3. In fry pan, melt 4 tbl butter, and add breadcrumbs. Stir just until toasty.
4. Spread half of the breadcrumb mixture on bottom of baking dish.
5. Spoon crab mixture into dish and pat down gently.
6. Sprinkle rest of breadcrumb mixture over top of casserole and bake for 20 minutes or until set.

1/2 pound cooked, peeled medium shrimp, or 2 (4 0z ea) cans tiny shrimp-drained (opt)
8 oz (2 cups) shredded swiss cheese
1/3 cup chop green onions
1 unbaked 9 inch frozen pie shell
Directions:
1. Preheat oven to 350 degrees.
2. Combine mayo, milk, eggs, & flour in bowl, then whisk until smooth. Stir in crab, shrimp, cheese, and onions.
3. Pour into pie shell on baking sheet. Bake 30-35 minutes or until quiche is golden brown. Cool 10 minutes before serving.
