This reminded me of a waldorf salad, with a twist. It's really great tasting, and very easy.
Ingredients:
1 can (16 oz) pineapple chunks, diced, drained, & juice reserved
2 cups mini marshmallows
1/2 cup granulated sugar
1 tbl all purpose flour
1 tsp white vinegar
1 egg, well beaten
1 container (8 ox) frozen whipped topping-thawed
4 medium sized apples, peeled, diced
1 & 1/2 cup dry roasted peanuts, chopped fine
Directions:
1. Refrigerate marshamallows & pineapple, covered, overnight.
2. In small sauacepan, stir together reserved pineapple juice, sugar, flour, vinegar, and egg. Cover, and over medium low heat, stirring for about 5 minutes or until temperature reaches 160 degrees. Cool, then refridgerate covered in bowl overnight.
3. In large bowl, combine the 2 chilled mixtures with the whipped topping, apples, and 1 & 1/4 cups of the peanuts.
4. Sprinkle remaining 1/4 cup of the peanuts on top, and chill until ready to serve.

Wassail for the Crockpot
Here's another great warm drink to help celebrate the holidays. Here we come a wassailing.....
Ingredients:
2 qts. apple cider
1 pint cranberry juice
3/4 cup sugar
1 tsp aromatic bitters
2 sticks cinnamon
1 tsp allspice
1 small orange, studded with cloves
1 cup rum
Directions:
Put all ingredients in a crocpot. Cover and cook on high for 1 hour, then on low for 4 to 8 hours.
***makes 12 cups
Ingredients:

1/2 cup sugar
1 tbl flour
1-2 tbl vinegar
1 egg beaten
1 carton (12 oz) frozen whipped topping, thawed
2 medium red apples, diced
2 medium green apples, diced
4 cups mini marshmallows
1 cup honey roasted peanuts
Directions:
1. Drain pineapple, reserving juice, and set pineapple aside.
2. In saucepan, combine the sugar, flour, vinegar, and the reserved juice until smooth.
Bring to a boil, cook and stir for 2 minutes or until thickened. Remove from heat and stir
a small amount of hot mixture into egg, then return all to pan, stirring constantly. Bring
to a gentle boil, cook and stir for 2 minutes. Remove from heat and cool.
3. Fold in whipped topping. Fold in apples, marshmallows, and pineapple.
4. Cover and refrigerate for 1 hour. Just before serving, fold in peanuts.

Apple Pockets
This dessert is so easy, yet very impressive...sure to be a pleaser all around.
Ingredients:
1 (15 oz) box refrigerated pie crusts, softened per package directions.
2 cups peeled, dices apples or 1 (21 oz) can apple pie filling
1/3 cup sugar
1 tbl all purpose flour
1 & 1/2 tsp of cinnamon
1 jar caramel tooping (optional)
Directions:
1. Preheat oven to 400 degrees-ungreased cookie sheet
2. Unroll pie crust & place on cutting board. Cut each crust into quarters (making 8 wedges)
3. In large bowl, combine apples, sugar, flour & cinnamon...mix well.
4. Top half of each wedge with 1/3 cup of apple mixture, fold top over filling. With fork press
edges to seal. Place on baking sheet and cut small slits in top of each pastry.
5. Bake for 15 minutes, or until light golden in color. Serve warm and drizzle with caramel topping (optional)

This dessert is so great, you can't eat just one...I bet. Great with coffee or tea.
Ingredients:
1/4 cup margarine
2/3 cup brown sugar
1 egg
1 cup applesauce
1 cup Granny Smith apples with skin diced small
1 cup all purpose flour
1 tsp baking soda
1/2 tsp salt
1 tsp pumpkin pie spice
1 & 1/2 cups of powdered sugar
3 tbl milk
1 tsp vanilla
Directions:
1. Preheat oven to 350 degrees and grease a 9x13 pan
2. Mix together margarine, brown sugar and egg until smooth.
3. Stir in applesauce and chopped apples into mixture.
4. Add flour, baking powder, salt, and pumpkin pie spice...mixing until well blended.
5. Pour into prepared pan and bake 25 minutes or until edges are browned. Cool on rack.
6. In bowl, mix powdered sugar and margarine, stir in vanilla and milk until smooth.
7. Spread over bars before cutting into 20 bars.

4 tbl sugar, divided
1/2 tsp salt
3/4 cup milk
1 egg
3/4 cup veggie oil
4 large apples, peeled, cored and sliced into 1/4 inch slices (rings)
2 tsp cinnamon
Directions:
1. In large bowl, combine flour, baking powder, 2 tlb of the sugar and the salt-mixing well.
2. Add the milk and eggs, beating until well blended.
3. In large, deep skillet, heat oil over medium high heat. Dip apple rings in batter and place in skillet and cook in batches for 2 to 3 minutes per side, until golden. Drain on paper towel lined platter.
4. In small bowl, combine the cinnamon and remaining 2 tbl of sugar-mix well. Then sprinkle over apple rings...serve immediatedly

This is a real crowd pleaser, real nice for the autumn holidays...and it's so simple.
Ingredients:
1 pkg (14.5 oz) gingerbread cake mix
1 can (21 oz) apple pie filling
2 large eggs
1/4 cup all purpose flour
1 tsp almond extract
Directions:
1. Preheat oven to 350 degrees and grease and flour 15 X 10 jellyroll pan.
2. Beat all ingredients at low speed for 20 seconds, then increase to medium and beat for 1 minute and then pour into prepared pan.
3.Bake for 20 minutes until toothpick inserted comes out clean. Cool cake in pan, on rack, for 10 minutes.
4. For glaze, whisk together, 1 cup powdered sugar and 1/4 cup sour cream until smooth...then drizzle over cake.
5. Serve cake warm or at room temperature.
***serves 12

3 cups chopped, cubed (1/2 ") apples (your favorite)
2/3 cup caramel ice cream topping
2 tsp lemon juice
1/2 cup pecan pieces
Ingredients:
1. Preheat oven to 375 degrees...also preheat a cookie sheet
2. In medium bowl, combine caramel pieces and flour.
3. Add apples, topping and lemon juice...mixing well.
4. Pour into crust and top with pecans.
5. Place crust on preheated cookie sheet and bake 40 to 45 minutes or until crust is browned.
