If you like crab cakes, you'll love these flavor filled, bite size treats, They are great for a party or a meal.
Ingredients:
11 ounces of fresh, minced clams-drained
1/4 cup chopped onion
1/4 cup chopped green pepper
2 eggs, beaten
2 tbl butter, melted
1/2 tsp lime juice
1/2 tsp hot sauce
1/2 tsp salt
1/8 tsp pepper
2/3 cup all purpose flour
1 tsp baking powder
vegetable oil for frying
Directions:
1. Combine clams, onion, green pepper, eggs, butter, lime juice, hot sauce, salt and pepper in
mixing bowl, and mix well.
2. Combine flour and baking powder, then add to clam mixture and stir until moistened.
3. Heat 3/4 inch of oil in skillet to 350 degrees. Drop batter into hot oil by level tablespoon. Fry
turning once, then drain on paper towels.
***makes 1 & 1/2 dozen

Corn Patties
These are a great side dish for corn lovers. Made the way this recipe reads, they're good with hot sauce. But you can omit the pepper and add 1/2 tsp sugar, then when done, dust them with powdered sugar.
Ingredients:
1 & 1/2 cups corn kernals (raw or canned-drained)
1 cup (about 29) finely crushed saltine crackers
1/3 cup lowfat milk
2 large eggs
1/4 tsp pepper
2 tbl canola oil
Directions:
1. Mix all ingredients except oil in medium oil until well blended.
2. Heat half of the oil in large skillet over medium heat.
3. Drop 6 heaping tbls of corn mixture onto skillet.
4. Cook 2 minutes, turn with spatula, and cook 2 minutes more until lightly browned.
5. Repeat with remaining mixture.
**4-5 servings

I love fritters...usually sweet ones the most. But there are all kinds you can make with this easy batter recipe. Just add what ever you like.
Ingredients:
1 cup all purpose flour (**if you use self rising flour then leave out the baking powder & salt)
1 tsp baking powder
1 tsp salt
2 eggs
1/2 cup milk
1 tsp vegetable oil
oil for frying
Directions:
1. Easy! combine first six ingredients until mixed well.
2. Add favorite ingredient to batter, example:
shrimp-chopped, also can 1/8 tsp Old Bay Seasoning to batter
corn-canned (drain) is o.k.
apples-chopped....can add cinnamon to batter
3. Fry until golded & cooked through about 3-4 minutes.

This dish is a nice change from other side dishes. The taste is unique and usually run out quickly. If you like fried green tomatoes, you'll like this downhome dish.

1 tsp baking powder
1 tsp sugar
3/4 tsp salt
1/4 tsp dried basil or 2 tbl fresh minced
1 can (28 ounce can) tomatoes, drained
1 tbl finely minced onion
1 tbl minced fresh parsley
1/2 tsp Worcestershire sauce
2 eggs
Vegetable oil for frying
Directions:
1. In large bowl, combine flour, baking powder, sugar, salt, & basil.
2. Cut tomatoes into 1/2 pieces, and place on paper towels to drain excess moisture.
3. Add tomatoes, onion, parsley, and Worcestershire to flour mixture...Don't mix in.
4. In smaller bowl, beat eggs and add to flour/tomato mixture. Blend lightly with fork.
5. In electric skillet, heat 1/4 " oil to 360 degrees. Oil is ready when small drop of batter sizzles when placed in skillet.
6. Drop batter by tablespoonfuls, patting down flatter, with fork.
7. Fry until golden brown on one side, then turn and fry other side.
8. Keep fritters warm in oven until ready to serve. Make 4 to 6 servings.
