Cauliflower is one of those vegetables that you either really love or really hate. This casserole is very good, and a bit different.
Ingredients:
1 head cauliflower
1 can cream of mushroom soup
1 tsp dijon style mustard
3 tbl grated, sharp cheddar cheese
1/2 can (use empty soup can) light cream
bread crumbs
Directions:
1. Preheat oven to 350 degrees. Lightly spray in 8x8 casserole dish
2. Break cauliflower into florets and steam in boiling water unitl tender.
3. In saucepan, mix soup, mustard, cream and cheese...heat through until all melted.
4. Place cauliflower in prepared casserole dish and pour liquid on top.
5. Bake covered for 35 to 40 minutes.
6. Remove cover and top with breadcrumbs. Return to oven to brown for about 10 minutes.

Summer Salad
My sister in law made this for BBQs. I just loved it. It's a little time consuming , but not difficult.
Ingredients:
1 bunch cauliflower
1 bunch broccoli
1 medium red onion
1 8 ounce block cheddar cheese-grated
1 small jar of mayonaise
3/4 cup sugar
1 small pkg of real bacon pieces
Directions:
1. Finely chop the cauliflower, broccoli, pulling apart making very small pieces. Do not use the stalk.
2. Finely chop red onion. Add to broccoli and cauliflower.
3. In another bowl, mix together mayo, and sugar and refrigerate at least 1 hour prior to mixing with veggies, cheese.
4. About 1 hour prior to serving, mix vegetables, cheese, bacon pieces and mayo mixture together....refrigerate until ready to serve.

Creamy Mashed Cauliflower
Really an interesting way of serving cauliflower, because some people aren't sure exactly what it is they're eating, but usually love it.
Ingredients:
5 cups cauliflower florets
1 & 1/2 quarts water
1 clove garlic
1/4 cup mayonaisse
1/2 tsp salt
Directions:
1. Steam cauliflower and garlic for 15 minutes, or until tender...drain well.
2. Blend in cauliflower, garlic, mayonaisse, and salt until creamy.
