Chicken Piccata

My Daughter is a chicken fanatic. If given a choice of anything on a menu, she'll always pick something chicken. So when I found this recipe, naturally I had to try it out on her. Of course she loved it, but so did the rest of the family.

Ingredients:

1 & 1/4 pound boneless, skinless chicken breats, or tenderloins
1/3 cup all purpose flour
1/4 tsp each salt & pepper
3 tbl butter, divided
1/2 cup chicken broth
4 lemon slices
1/4 cup fresh parsley, coarsley chopped

Directions:

1.Place chicken in between layers of wax paper and pound to 1/8" thickness.
2.Sprinkle with salt & pepper
3.Place flour on plate & dip chicken in flour to coat both sides.
4.Melt 1 tbl of the butter in skillet over medium heat. Add half the chicken to cook each side until golden...abaout 1 minute. Repeat until all chicken is cooked.
5.Transfer to serving platter.
6.Add chicken broth and lemon slices to skillet & bring to boil....stirring up the browned bits on the bottom of the skillet.
7. Stir in 1 tbl butter...pour sauce over chicken before serving.
